I need an 8.5" & a 9.5" diameter frying pans. Although Scanpan makes both they cannot be bought separately but only in packages that include sizes I don't need. Such packages may save money over open stock pans, but buying what's not needed is not saving money. The 9.5" pan height is listed as 1.75" but it's only 1.5" - too low for what I need. I "make do", but this is deceptive advertising or sloppy editing. I know Scanpan makes both "crepe" & "frying pan" formats, but my earlier CTX 9.5" frying pan did just fine for flipping & sauteing masses of greens. ES5 needs to expand the format range or just make a more dual purpose "frying pan" format for the 9.5" frying pan.
BUT - the ES5 handle is amazing comfortable, similar to the CTX handle but heat resistant & a bit shorter (better fit in drawers), the pan is lightweight but performs perfectly (except for its being too shallow). Both are qualities important for ageing folks like me who like to flip our omlettes. I originally bought the Classic 8" & 9.5" pans but the handles that have been redesigned since my first purchase 30 yrs ago are too thin & flat - not curved enough - so I returned them for the ES5 duo.
