Ingredients: 

4 slices of thick-cut bacon (about 3 oz.), cut into small cubes 

1 onion, chopped 

Kosher salt and freshly ground black pepper 

2 lbs. of fresh green beans, trimmed 

2 oz. goat cheese, crumbled (optional) 

Handful of walnuts, roughly chopped 

Instructions: 

Cook the Bacon: Begin by placing the bacon cubes in your roasting pan on medium-high heat. Stir until bacon is golden and crispy, about 8-10 minutes. Remove bacon with a slotted spoon, leaving the fat in the pan for added flavor. 

Add Onions: Reduce the heat to medium, add the chopped onions, and season with a pinch of salt and pepper. Sauté until onions soften and turn a golden color, about 3 minutes. 

Green Bean Time: Cut the ends of the green beans and cut them in half. Then toss them into the pan with 2 tablespoons of water. Cover, and let the beans steam until they’re bright green and tender-crisp, about 5 minutes. 

Serve: Move the green beans to a serving platter. Top with crispy bacon, a sprinkle of goat cheese (optional), and walnuts for extra crunch.
