Ingredients: 

2 pounds lean ground beef 

1 onion, diced 

1 jalapeño, seeded and finely diced 

4 cloves garlic, minced 

2 ½ tablespoons chili powder (divided, or to taste) 

1 teaspoon cumin 

1 green bell pepper, seeded and diced 

14 ½ ounces crushed tomatoes (1 can) 

19 ounces canned red kidney beans, drained & rinsed 

14 ½ ounces canned diced tomatoes with juice 

1 ½ cups beef broth 

1 cup beer 

1 tablespoon tomato paste 

1 tablespoon brown sugar (optional) 

Salt and black pepper to taste 

Directions: 

Heat the Dutch oven over medium heat and brown the ground beef. Drain excess fat. 

Add the diced onion, jalapeño, and garlic, cooking for about 5 minutes until the onions soften. 

Stir in 1 ½ tablespoons of chili powder, cumin, and bell pepper. Let it cook for another 2 minutes to release the flavors. 

Add crushed tomatoes, diced tomatoes with juice, kidney beans, beef broth, beer, tomato paste, brown sugar (if using), and the remaining chili powder. Stir to combine. 

Season with salt and black pepper to taste. Bring the mixture to a boil, then reduce the heat and let it simmer for at least 45 minutes, stirring occasionally.
